This month’s catering highlight is the American Home Furnishings Alliance (AHFA) Speaker Dinner, held in the Clubhouse at Cameron Campus on the evening of August 8, 2023. A plated service was provided in the Great Room of the Clubhouse, with seating for 28 guests.
Guests mingled throughout the rooms and on the beautiful patio while enjoying house and specialty wines, craft beers, and other beverages at a reception bar.
A pre-set Spinach Salad with Mandarin oranges, avocado slices, shaved red onion, and black sesame seeds was served with a tangerine shallot vinaigrette. A dual entrée course offered Chicken Marsala and Herb Seared Red Snapper. These two items were accompanied by Wild Rice Pilaf with fresh herbs and Sautéed Haricot Vert with red pepper bundles. The dessert course was House-Made Lemon Squares with Raspberry Coulis and Whipped Cream. Coffee (of course!) was served as well.
