Need a healthy, gluten-free lunch option to serve at your next meeting or conference? Look no further than our Mediterranean Buffet, which is a very popular menu choice among both returning and new guests alike and was recently served in The Clubhouse venue.
Packed with flavor and fresh, colorful ingredients, this lunch menu is always a delight. It begins with a traditional Caesar salad of crisp Romaine lettuce, parmesan cheese and grape tomatoes with garlic herb croutons served on the side. A delicious Tuscan Caesar dressing is served to compliment the salad. This client chose the Harissa Spiced Moroccan Chicken entrée, consisting of shredded chicken in a Chermoula sauce of parsley, cilantro, garlic, and olive oil. Guests can also choose a Grilled Chicken Breast with capers, sun-dried tomatoes and kalamata olives in a Mediterranean wine sauce.
The chicken dish was accompanied by oven-roasted red potatoes with fresh chopped herbs and parmesan cheese, as well as a medley of sauteed vegetables with garlic and herbs. Guests also have the option of choosing a Mediterranean rice pilaf with walnuts and currents if they prefer this starch over potatoes.
While not gluten free, grilled pita bread is always served with this menu, as well as flaky Baklava triangles for a sweet treat after the meal. For gluten free guests, seasonal fruit can be offered for dessert or our special “Partake Cookies” which are allergen friendly as well as dairy and gluten free.
