Catering Highlight: Get Ready, New Menus Are Coming Down the Pipe

We will roll out our new catering menu in July, and we are excited to offer some new items to our clients! Don’t worry, we kept many of the fan favorites such as the Mediterranean (now called, Taste of Mediterranean) and Fiesta Taco Bar (previously the Southwest Fiesta Buffet), but we have tweaked some of the inclusions and revamped the classics.

Our hot breakfast options now include a Baked Cinnamon French Toast Casserole with Maple Syrup (yum), Southern Style Chicken Biscuits, and Vanilla Yogurt Parfaits. Some new break items include Trail Mix Clusters, Buffalo Chicken Bites, House Made Marshmallow Krispies with Chocolate Drizzle, and Spanakopita! Need a more exciting break to entertain or energize your guests? We will now offer Themed Breaks to include Power Break, Fiesta Break, Milk & Cookies, and Ballgame. Each break includes specific food items and a beverage tailored to the theme.

One of the new menus we’re thrilled to offer is our Latin Inspiration Buffet. This menu includes a Fresh Lettuce Greens Salad with Crisp Vegetables, with an option to upgrade to a Mixed Greens Salad with Jicama, Mango, and Red Bell Pepper with a Cilantro Lime Vinaigrette. For the entrees you have a choice between Braised Chicken Thighs in a Tomato Chipotle Sauce or Beef Barbacoa in an Ancho Smoked Paprika Sauce. Two sides may be selected from Cuban Style Yellow Rice, Chipotle Spiced Vegetable Assortment, Refried Beans with Cotija Cheese and Twice Fried Plantains (Tostones) with Salsa Rosada on the side. A choice of dessert between Tres Leches Trifle and Mango Coconut Cobbler rounds out the meal with a perfectly paired sweet ending.

Another fun buffet will be our Bistro Brunch Buffet, perfect for morning or mid-morning meetings, but also great for your lunch retreat. Start off with a Garden or Upgraded Salad and choose between Crispy Chicken Tenderloins with Honey Mustard Dip or Grilled Ham Steaks. Next, select 3 sides from Buttermilk Pancakes, French Toast Sticks, Deviled Eggs, Scrambled Eggs & Cheddar, Freshly Sliced Fruit Display, or Potato Latke Bites. If you really want to treat your guests, upgrade your Pancakes to include Whipped Cream, Chocolate Chips, Strawberries and Peach Topping.

We know you’re hungry, but we have more to share! The entrée list now offers seafood selections to include Salmon or Grilled Mahi-Mahi, and we’ve added some new Salads, Sandwiches & Sides to our Boxed Lunch, and Deli Sandwich Buffets.

Finally, for those needing to serve a plated meal, we’ve crafted some menus to get you started on the planning. Of course, we can continue to customize these as desired, but we think you’ll love the options provided to include Country Club, European and Steakhouse inspired cuisine.
