This month’s catering highlight is the Southwest Fiesta Buffet fajita bar, a client favorite which was served for lunch to our Freud America guests. It accommodates a variety of dietary needs, including gluten-free and vegetarian.
For starters, a colorful salad with crisp lettuce, grape tomatoes, roasted sweet corn, jalapeños, radishes, cilantro, cheese, and black beans was served with a creamy herb dressing or house-made vinaigrette on the side. Fresh tri-colored corn chips with salsa provided a nice crunchy compliment to the salad.

Guests had the option of creating fajitas or tacos from marinated grilled chicken with onions and peppers or seasoned beef taco meat, with a variety of toppings – shredded lettuce, cheddar cheese, sour cream, salsa, and guacamole. Southwest style rice with black beans and jalapeños were also available.
Fresh-baked cinnamon and sugar flour tortilla chips, served with fresh fruit salsa, were served for dessert.
